We medium+ roast a certified organic South American water processed bean, and it comes out a strong cup that tastes better than a lot of regular coffees out there.  The water process is an organic decaffeinating method, which uses no chemicals and preserves the flavor better than any other method on the market today. This bean has been de-caffed... not de-coffeed.
